RAW CHASEW NUTS

Raw Cashew Nuts are the seed produced from the Cashew tree or known for its scientific name as Anacardium Occidentale. This plant is native to Central America, the Caribbean and Northern South America, including northeastern Brazil.

Characteristics

  • A tropical evergreen tree that can grow up to 14m (46 ft).
  • Has a light reddish to yellow fruit, whose pulp can be processed into a sweet, astringent fruit drink or distilled into liquor. The seed is located underneath the cashew fruit.
  • Seeds contain 5% water, 30% carbohydrates, 44% fat, and 18% protein.

Uses

  • A nut in the culinary sense, which is either eaten on its own, used in recipes or processed into cashew cheese or cashew butter.
  • Found in Indian and Pakistani cuisine for garnishing sweets, curries, ground into a paste that forms a base of sauce for curries, and some sweets.
  • Found in other cuisines in Goan, Thai, Chinese, Philippines, and Indonesia, used in either curries, sweet, in whole in a dish, or roasted with salt seasoning.
  • The shell of the cashew seed yields derivatives that can be used in many applications including lubricants, waterproofing, paints, and arm production, starting in World War II.
